We had 'family company' for supper tonight. I made bison meatloaf (I always put some onion, celery, carrot and peppers through the food processor, and mix into the meat with an egg, and some gluten free bread crumbs) mashed potatoes, steamed carrots and opened some creamed corn - gotta have that creamed corn with meatloaf! The glaze on the meatloaf was ketchup, brown sugar, and a bit of plain Jane mustard. MMMM good. For dessert, we had angel food cake (ten egg whites and a mix...very easy and GF) with strawberries. MMMMM good if I do say so myself! A glass of white white just made it all so much better!
Lunch was skipped. My bad.
Breakfast was a toasted tea cake and two poached eggs, with a glass of skim milk.
Snack? Are you kidding? I won't be able to eat for a week I am so full!

Busy, busy, busy!
So, here we go again, filling up the closet! Although,in my defense? The things I bought are replacing items that are far too big, so it is a "one in, one out" situation. I ordered white and beige cargo capri's that convert to shorts with the use of a clever little side tab, and a very much needed pencil skirt to use with the tops I already have. I wish they would have had one size smaller, but as it stands, this one will do. Who knew that clothing gets bigger with use? I always bought things that fit nicely in the store, but I am finding out that it is best to have them fit a little bit on the snug side. A LITTLE on the snug side to me, means not pulling it six inches away from my body for "ease"! Changing the habits of a lifetime is not an easy thing to do. Anyway, back to the pencil skirt. The fabric is firm, smooth and stretchy. No slip recquired, which is a big plus for me in the summer. And the length? PERFECT. Not too long, not too short. With a back pleat no less! So, ready for the pictures?

Another day...
spent busily doing what? LOL I do know I have been up and running all day. It started off quietly enough, with preparing breakfast for dear hubby before he left for Vancouver. I made us each and egg, and two pieces of bacon, with a bowl of oatmeal for "dessert". I put maple syrup and raisins into the porridge for hubby, and it did make those baby blues brighter! It was enough to keep me going until five, when the urge for a taco salad overcame me. Unfortunately the avocados were not ripe, so that little garnish was sorely missed. Otherwise, it was a success!
My online shopping is starting to arrive,




so I have three more t-shirts, a pair of yoga pants and a new hoody to sport around town. I really do have to stop buying clothes, but the Internet just makes it too easy! A person could forgo laundry completely, armed with a computer and a credit card .... who knew that buying casual clothes could be so much fun, or that it would make so much of a difference in my outlook on life? I made sure that these things were "just right tight" so I won't have to replace them so soon. My weight loss has been slow, but it is finally making a difference in the sizes I buy. (There must be a huge inch difference in the plus sizes, because it sure took me a long time and a lot of pounds to drop two sizes!) I am starting to really like my clothes being more fitted. Part of that has been belly acceptance'. It is there. I am working at getting rid of it, but oh my, you can not hide it, so you may as well make the rest of you look neat! I will never be a fan of tight clothing, but there is something to be said for shoulder seams that rest on your shoulder point and not on your bicep! It really is a thrill to go to the closet every day, and choose something to wear, that I can feel good in, and that is suitable for the day's activities.
Grocery shopping was also on the agenda, although I just needed very few things. If only every grocery day were as simple! A jar of marmalade, a jar of raspberry jam and a bag of taco chips. Can't beat that for simple, can you?

Lunch: who had room after all that breakfast?
Supper: 1/2 cup of taco meat mix over romaine lettuce, garnished with salsa, sour cream and cheddar cheese, washed down with a Fresca, followed by a nice cuppa tea!

In the mood for a good Greek dish? Chicken Lemonato
Today's menu:
Breakfast: two poached eggs, half of a GF tea cake, glass of skim milk
Lunch: Chicken broth with a toasted tea cake
Supper: Chicken breast, with roasted potatoes and spinach with cream
Chicken Lemonato
INGREDIENTS:
· 2-3 pounds chicken pieces
· 3-4 pounds potatoes
Marinade:
· ¼ cup olive oil
· 5 garlic cloves, crushed
· Juice of 3-4 lemons
· 1 teaspoon each salt and pepper
· 3 tablespoons oregano
DIRECTIONS:
· Clean and wash the chicken pieces.
· Mix the marinade ingredients*, and toss the chicken with it to coat all the pieces.
· Chill, covered in the refrigerator 2 hours, even over night.
· Turn chicken pieces at least once during marinating time.
· Peel and slice the potatoes into chunks or wedges.**
· Put potatoes into a large, greased casserole pan.
· Add the marinade and toss potatoes to completely coat.
· Arrange the chicken over the potatoes.
· For more tender chicken and potatoes, cover pan for first 45 minutes of baking.
· Bake at 350 degrees for about 60-90 minutes until both chicken and potatoes are completely cooked and tender.
· Baste 2-3 times while baking.
· If needed, add water to the pan until the potatoes are tender.
* May combine all ingredients in a blender.

Guess what I found at Costco today?
It was meant to be. I love it when items call my name from afar, and this bag literally hollered at me when I first walked in the door! In usual Costco fashion, it was sitting on top of a mountain of similar bags in various colours. Red, black, white, and be still my heart, pyrite metallic. When I saw the price tag? I knew I had scored the perfect bag for the summer. LOVE it, love it, love it! I wore my metallic sandals today, so how could I pass up a bag that didn't match, but coordinated so well with them? I love the cross body strap, and the extra depth to this bag...it will work out really well for home and for travel.
